    Prepare the Vegetables

    Clean and slice the leeks and scallions. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the leeks and scallions, and sauté until softened, about 5 minutes. Remove from heat and set aside.

    Cook the Pancetta

    In the same skillet, add the pancetta and cook until crispy, about 4-5 minutes. Remove from heat and drain on paper towels.

    Mix the Cheeses

    In a mixing bowl, combine the goat cheese and mozzarella. Add half of the cooked pancetta, sautéed leeks, and scallions. Mix well to combine.

    Prepare for Baking

    Preheat the oven to 375°F (190°C). In a greased baking dish, spread the cheese and vegetable mixture evenly.

    Add Toppings

    Sprinkle the remaining pancetta on top, drizzle with the remaining olive oil, and finish with grated Grana Padano cheese.

    Bake in the preheated oven for 20-25 minutes, or until the top is golden and bubbly.

    Remove from the oven, garnish with chopped Italian parsley, and let cool for a few minutes before serving.
