Pasta Preparation

    In a large pot, bring salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the spaghetti.

    Mix the Sauce

    In a mixing bowl, whisk together the eggs, grated Parmesan cheese, black pepper, and a pinch of salt until well combined. Set aside.

    Cook the Pancetta or Guanciale

    In a large skillet over medium heat, add the pancetta or guanciale and cook until crispy, about 5-7 minutes. Remove from heat.

Combining Ingredients
