Directions

  1. 1

    Prepare the Baking Cups

Preheat your oven to 425°F (220°C). Grease four ramekins or muffin cups with butter and dust them with cocoa powder to prevent sticking.

  2. 2

    Melt Butter and Chocolate

In a medium microwave-safe bowl, combine the unsalted butter and semi-sweet chocolate. Microwave in 30-second intervals, stirring in between, until the mixture is melted and smooth.

  3. 3

    Combine Sugar and Eggs

In a separate mixing bowl, whisk together the granulated sugar, large eggs, and large egg yolks until the mixture becomes pale and slightly thickened.

  4. 4

    Combine Mixtures

Pour the melted chocolate and butter mixture into the egg mixture. Stir gently to combine.

  5. 5

    Add Dry Ingredients

Sift the all-purpose flour, pinch of salt, and vanilla extract into the chocolate mixture. Fold gently until just combined, being careful not to over-mix.

  6. 6

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

  7. 7

    Bake

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are set but the center is still soft.

  8. 8

    Cool and Serve

Remove from the oven and let them cool for 1 minute. Carefully run a knife around the edges, then invert onto plates. Serve warm, optionally with ice cream or whipped cream.
