Method
Pasta Preparation
- 1
Cook the Fettuccine
Bring a large pot of salted water to a boil. Add fettuccine pasta and cook according to package instructions until al dente, usually about 8-10 minutes. Drain and set aside, reserving a little pasta water.
Chicken Preparation
- 2
Prepare the Chicken
While the pasta is cooking, heat olive oil in a grill pan or skillet over medium heat. Season chicken breasts with salt, black pepper, and garlic powder on both sides.
- 3
Grill the Chicken
Place chicken in the heated pan and cook for about 6-7 minutes on each side, or until fully cooked (internal temperature should reach 165°F). Remove from heat and let rest for a few minutes before slicing.
Alfredo Sauce Preparation
- 4
Make the Alfredo Sauce
In a saucepan over medium heat, melt the butter. Add minced garlic and sauté for about 1 minute until fragrant. Pour in the heavy cream and bring to a gentle simmer.
- 5
Add Cheese and Seasonings
Slowly whisk in the grated Parmesan cheese until melted and smooth. Season with salt and black pepper to taste. If the sauce is too thick, you can add a splash of reserved pasta water to reach desired consistency.
Combine and Serve
- 6
Combine Pasta and Sauce
Add the drained fettuccine to the Alfredo sauce and toss to coat the pasta evenly.
- 7
Plate and Garnish
Slice the grilled chicken and place it on top of the pasta. Garnish with chopped parsley before serving.
