Method
Crust Preparation
- 1
Prepare the crust
Preheat your oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs, granulated sugar, salt, and melted butter. Mix until the mixture resembles wet sand.
- 2
Form the crust
Press the mixture firmly into the bottom of a 9-inch springform pan. Use the bottom of a measuring cup or your fingers to ensure it's evenly packed.
- 3
Bake the crust
Bake the crust in the preheated oven for 10 minutes. Remove and allow to cool while preparing the filling.
Filling Preparation
- 4
Prepare the filling
In a large mixing bowl, beat the cream cheese until smooth and creamy. Gradually add the granulated sugar and continue to beat until well combined.
- 5
Add remaining ingredients
Add in the sour cream, vanilla extract, and eggs one at a time, mixing well after each addition. Finally, stir in the all-purpose flour until just combined.
- 6
Pour into crust
Pour the cheesecake filling over the cooled crust in the springform pan, smoothing the top with a spatula.
- 7
Bake the cheesecake
Bake in the oven at 350°F (175°C) for about 50-60 minutes, or until the center is set and only slightly jiggly. Turn off the oven and crack the oven door, letting the cheesecake cool in the oven for 1 hour.
Topping Preparation
- 8
Prepare the topping (optional)
If desired, toss fresh berries with powdered sugar in a small bowl. Let them sit for about 10 minutes to release their juices.
- 9
Serve the cheesecake
Once cooled, remove the cheesecake from the springform pan. Top with the berry mixture and garnish with mint leaves before slicing and serving.
