Prepare the Veal
Lay out the thin sliced veal on a clean surface. Season with salt and black pepper. Place a slice of prosciutto on each piece of veal followed by a slice of mozzarella cheese.

Roll the Veal
Carefully roll up each piece of veal tightly, securing the filling inside. You can use toothpicks to hold the rolls together if necessary.

Sauté the Vegetables
In a large skillet, heat olive oil over medium heat. Add minced garlic, carrots, and mushrooms. Sauté until the vegetables are tender, about 5-7 minutes. Remove from the skillet and set aside.

Cook the Rollatini
In the same skillet, add the veal rollatini. Sear on all sides until golden brown, about 3-5 minutes.

Add Marsala Wine
Pour the Marsala wine into the skillet, scraping up any browned bits from the bottom. Bring to a simmer.

Garnish and Serve
Remove from heat, garnish with fresh parsley, and serve hot with the sauce drizzled over the top.
