Prepare the Veal
Season the veal scallopini with salt and black pepper on both sides. Dredge each piece in flour, shaking off any excess.

Cook the Veal
In a large skillet, heat the olive oil and butter over medium-high heat. Once hot, add the veal pieces and cook for about 3-4 minutes on each side until golden brown. Remove the veal from the skillet and set aside.

Add Prosciutto and Mozzarella
Layer a slice of prosciutto on top of each veal piece, followed by a generous amount of mozzarella cheese.

Create the Sauce
In the same skillet, pour in the Marsala wine and scrape up any browned bits from the bottom of the pan. Allow the wine to simmer for 2-3 minutes.

Combine and Serve
Return the veal to the skillet and cover with the Marsala sauce. Cook for an additional 2-3 minutes until the cheese melts. Garnish with fresh parsley before serving.
