Cooking Instructions

  1. 1

    Caramelize the Onions

In a large pot, melt the butter and olive oil over medium heat. Add the sliced onions and a pinch of salt. Cook for about 30-40 minutes, stirring frequently, until the onions are caramelized and golden brown.

  2. 2

    Add Garlic and Deglaze

Once onions are caramelized, add minced garlic and cook for another minute. Pour in the white wine to deglaze the pot, scraping up any browned bits from the bottom.

  3. 3

    Simmer the Soup

Add the beef broth, thyme, bay leaves, salt, and pepper. Bring to a simmer and cook uncovered for about 30 minutes, allowing the flavors to meld.

  4. 4

    Prepare the Bread and Cheese

While the soup is simmering, preheat your oven to 350°F (175°C). Arrange the baguette slices on a baking sheet and toast in the oven until golden brown, about 10 minutes.

  5. 5

    Serve the Soup

Remove bay leaves from the soup. Ladle the soup into oven-safe bowls, place a toasted baguette slice on top of each bowl, and sprinkle with Gruyère cheese. Broil in the oven until the cheese is bubbly and golden, about 3-5 minutes.
