1. Prepare the Ingredients
Start by cutting the chicken breast into bite-sized chunks and dicing the potatoes. Slice the onions, mushrooms, hot peppers, sweet peppers, and sausage.
2. Sauté Chicken
In a large skillet, melt the butter over medium heat. Add the chicken chunks and season with salt and black pepper. Cook until the chicken is browned, about 5-7 minutes.
3. Add Sausage and Vegetables
Add the sliced sausage to the skillet and cook for an additional 3-4 minutes. Then add the chopped onions, mushrooms, hot peppers, and sweet peppers. Sauté until the vegetables are tender, about 5-7 minutes.
4. Deglaze with Wine
Pour in the white wine to deglaze the pan, scraping up any browned bits from the bottom. Bring the mixture to a simmer.
5. Add Potatoes
Add the diced potatoes to the skillet. Cover and let simmer for 15-20 minutes, or until the potatoes are tender and the chicken is cooked through.
6. Garnish and Serve
Remove from heat, garnish with chopped parsley, and serve hot.
