Prepare the Ingredients
Slice the chicken breasts in half horizontally to create thinner cutlets. Season both sides with salt and black pepper. Slice the mushrooms and mince the garlic.

Sauté the Chicken
In a large skillet, heat 1 tablespoon of olive oil and 2 tablespoons of butter over medium-high heat. Add the chicken cutlets and cook for about 4-5 minutes on each side, until golden brown. Remove the chicken from the skillet and set aside.

Add the Marsala Wine
Pour in the Marsala wine, scraping the bottom of the skillet to deglaze. Bring to a simmer and reduce the wine by about half.

Combine the Ingredients
Return the chicken to the skillet and simmer with the sauce for about 5-7 minutes, or until the chicken is cooked through and the sauce has thickened slightly.

Finish and Serve
Stir in the remaining butter and chopped fresh parsley. Serve hot over pasta or with a side of vegetables.
