Prepare the Ingredients
Chop the chicken breast into bite-sized chunks. Dice the onion, slice the mushrooms, and bell pepper. Peel and cube the potatoes. Mince the garlic.

Sauté the Chicken
In a large skillet, melt the butter over medium-high heat. Add the chicken chunks and season with salt and pepper. Cook until browned on all sides, about 5-7 minutes.

Deglaze with Wine
Pour in the white wine and scrape the bottom of the skillet to deglaze. Bring to a simmer and cover. Cook for 15-20 minutes until the chicken is cooked through and the potatoes are tender.

Finish and Serve
Remove from heat, sprinkle with fresh parsley, and adjust seasoning if necessary. Serve hot.
