Make the Filling
In a large mixing bowl, beat the cream cheese with sugar until smooth. Add sour cream and vanilla extract, mixing until well combined. Beat in the eggs one at a time, ensuring each is fully incorporated.

Bake the Cheesecake
Pour the cream cheese mixture over the crust in the springform pan. Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly.

Cool and Chill
Turn off the oven and leave the cheesecake inside with the door ajar for 1 hour. Then, remove from the oven and let it cool to room temperature before refrigerating for at least 4 hours or overnight.

Prepare Strawberries
Wash and slice the fresh strawberries. Sprinkle with powdered sugar and allow them to macerate for about 15 minutes.

Serve
Once the cheesecake has chilled, remove it from the springform pan. Top with the macerated strawberries and serve.
