Make the Crust
Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan evenly. Bake for 8-10 minutes until set. Remove from oven and let cool.

Prepare the Filling
In a large mixing bowl, beat the softened cream cheese until smooth. Add sugar, vanilla extract, and sour cream, mixing until well combined. Add eggs one at a time, mixing on low speed until just blended. Do not overmix.

Combine and Bake
Pour the filling over the cooled crust. Bake in the preheated oven for 50-60 minutes or until the center is set but slightly jiggly. Turn off the oven, crack the door, and let the cheesecake cool in the oven for 1 hour.

Chill
Remove the cheesecake from the oven, and let it cool to room temperature. Refrigerate for at least 4 hours or overnight for the best texture.

Add Toppings
Before serving, drizzle chocolate syrup and caramel sauce on top of the cheesecake. Sprinkle with chopped candied pecans.
