Method
Fried Catfish Filet Preparation
Marinate the Catfish
In a large bowl, soak the catfish filets in buttermilk for at least 30 minutes.
Prepare the Coating
In a separate bowl, mix together cornmeal, flour, cayenne pepper, salt, and black pepper.
Coat the Fish
Remove the catfish from the buttermilk, allowing excess to drip off. Dredge each filet in the cornmeal mixture, coating well.
Fry the Catfish
In a large frying pan, heat vegetable oil over medium-high heat. Fry the catfish filets for about 4-5 minutes on each side or until golden brown. Drain on paper towels.
Tartare Sauce Preparation
Mix the Ingredients
In a small bowl, combine mayonnaise, dill pickles, capers, lemon juice, parsley, salt, and pepper. Mix well and refrigerate until serving.
Truffle Fries Preparation
Prepare the Fries
Preheat the oven to 425°F (220°C). Spread the cut potatoes on a baking sheet, drizzle with olive oil, and season with salt and pepper. Bake for 30-35 minutes until crispy.
Finish with Truffle Oil
Once baked, toss the fries with truffle oil and grated Parmesan cheese. Serve hot.
