1. Heat the Milk
In a saucepan, heat the milk over medium heat until it reaches about 180°F (82°C). Stir occasionally to prevent scorching.
2. Cool the Milk
Remove the saucepan from heat and let the milk cool down to around 110°F (43°C). You can use a thermometer for accuracy.
3. Add Yogurt Starter
In a small bowl, mix the 2 tablespoons of plain yogurt with a few tablespoons of the cooled milk until smooth. Then, stir this mixture back into the pot of cooled milk.
4. Incubate the Mixture
Cover the pot with a lid and wrap it in a towel to keep it warm. Let it sit in a warm place (like an oven with the light on) for 6 to 12 hours, depending on how tangy you want your yogurt.
5. Check the Yogurt
After the incubation period, check the yogurt. It should be thickened and have a tangy flavor. If it’s not set, let it sit for a few more hours.
6. Cool and Store
Once set, transfer the yogurt to containers and refrigerate. It will continue to thicken as it cools.
