    Prepare the Shrimp

    Peel and devein the shrimp. Rinse thoroughly and pat dry with paper towels.

    Make the Sweet Chili Remoulade

    In a bowl, combine the sweet chili sauce, mayonnaise, lime juice, chopped cilantro, and season with salt and black pepper to taste. Mix well and set aside.

    Fry the Wontons

    Heat oil in a deep fryer or a large pan to 350°F (175°C). Cut wonton wrappers into triangles and fry in batches until golden and crispy, about 1-2 minutes. Remove and drain on paper towels.

    Cook the Shrimp

    In a skillet over medium heat, sauté the shrimp until they turn pink and are cooked through, about 3-4 minutes. Season with salt and black pepper.

    Assemble the Dish

    Chop the iceberg lettuce into bite-sized pieces and arrange on a serving plate. Top with cooked shrimp and crispy wontons. Drizzle the sweet chili remoulade over the top.
