Gather and prepare all the ingredients. Chop the vegetables, season the chicken with salt and pepper, and set aside.

In a large paella pan or skillet, heat the olive oil over medium heat. Add the chicken pieces and cook until they are browned on all sides. Remove the chicken and set aside.

Stir in the Valencia rice, saffron, and paprika. Cook for 2 minutes, allowing the rice to absorb the flavors. Then, add the chicken broth and bring to a boil.

Return the browned chicken to the pan. Reduce the heat to low, cover, and let it simmer for about 20 minutes, or until the rice is tender and has absorbed the liquid.

Once cooked, remove from heat and let it rest for 5 minutes before serving. Garnish with lemon wedges.
