Cooking Instructions
Prepare the Lobster Broth
In a large pot, bring water to a boil and add the whole lobster. Cook for about 10 minutes, then remove the lobster and set aside. Keep the broth at a simmer.
Sauté Vegetables
In a paella pan or large skillet, heat olive oil over medium heat. Add chopped onion, red bell pepper, and minced garlic. Sauté until softened.
Add Rice and Spices
Stir in the Bomba rice, saffron, paprika, salt, and black pepper. Cook for 2-3 minutes to toast the rice.
Add Broth
Pour in the lobster broth and bring to a boil. Reduce heat to medium-low and simmer for about 10 minutes.
Add Seafood
Arrange the shrimp, mussels, calamari, and the lobster (cut in half) over the rice. Cover with a lid and cook for an additional 10-15 minutes, or until the seafood is cooked and the rice is tender.
Finish and Serve
Remove from heat and let it rest for 5 minutes. Garnish with green peas. Serve directly from the pan.
