Prepare the base
In a large paella pan or a wide skillet, heat the olive oil over medium heat. Add the chopped onion and red bell pepper, sautéing until softened, about 5 minutes.

Add garlic and spices
Stir in the minced garlic, smoked paprika, and saffron threads. Cook for an additional 2 minutes until fragrant.

Add rice and broth
Add the Arborio rice to the pan, stirring to coat it in the oil and spices. Pour in the chicken broth and bring to a boil. Reduce the heat to low and let it simmer uncovered for about 15 minutes.

Add seafood
Gently fold in the shrimp, mussels, calamari, and fish chunks. Cover the pan with a lid or aluminum foil and cook for an additional 10-15 minutes until the seafood is cooked through and the rice has absorbed the liquid.

Finish and serve
Once done, remove from heat and let it sit for 5 minutes. Serve with lemon wedges and sprinkle fresh parsley on top.
