Cooking Instructions
Prepare the Chicken
Preheat your oven to 375°F (190°C). Season the chicken breasts with salt and black pepper.
Breading Station
Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and the third with a mixture of breadcrumbs and grated Parmesan cheese.
Bread the Chicken
Dredge each chicken breast in flour, then dip into the beaten eggs, and finally coat with the breadcrumb mixture.
Fry the Chicken
In a large skillet, heat olive oil over medium heat. Fry the breaded chicken breasts for about 4-5 minutes on each side until golden brown.
Bake the Chicken
Transfer the fried chicken to a baking dish. Pour tomato sauce over the chicken and sprinkle with shredded mozzarella cheese. Bake in the preheated oven for 20-25 minutes.
Cook the Spaghetti
While the chicken is baking, cook the spaghetti according to package instructions. Drain and toss with a little olive oil and salt.
Serve
Serve the baked chicken parmigiana over a bed of spaghetti with extra tomato sauce on the side.
