Prepare the Ingredients
Gather all the ingredients and chop the chicken, pork, and vegetables as needed.
Heat the Oil
In a large paella pan or wide skillet, heat the olive oil over medium heat.
Brown the Meats
Add the chicken thighs, chorizo, and diced pork to the pan. Cook until browned on all sides, about 8-10 minutes.
Add Vegetables
Add the onion, garlic, and red bell pepper to the pan. Sauté until the vegetables are softened, about 5 minutes.
Season the Mixture
Stir in the paprika and saffron, coating the meat and vegetables well.
Add Rice and Broth
Add the rice to the pan, stirring to combine. Pour in the chicken broth and bring to a boil.
Simmer the Paella
Reduce the heat to low and let the paella simmer without stirring for about 20 minutes, or until the rice is cooked and has absorbed the liquid.
Add Peas
In the last 5 minutes of cooking, sprinkle the frozen peas over the top of the paella.
