Directions

  1. 1

    Cook the Pasta

Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

  2. 2

    Prepare the Vegetables

While the pasta is cooking, wash and chop the zucchini, bell pepper, and carrot into bite-sized pieces. Halve the cherry tomatoes.

  3. 3

    Sauté the Garlic

In a large skillet, heat the olive oil over medium heat. Add minced garlic (from the cloves) and sauté for about 1 minute until fragrant but not browned.

  4. 4

    Cook the Vegetables

Add the chopped zucchini, bell pepper, and carrot to the skillet. Sauté for about 5-7 minutes until the vegetables are tender but still crisp. Add the cherry tomatoes and cook for an additional 2-3 minutes.

  5. 5

    Combine Pasta and Vegetables

Add the drained pasta to the skillet with the vegetables. Toss everything together to combine, ensuring the pasta is coated with the olive oil and mixed with the vegetables.

  6. 6

    Season the Dish

Sprinkle with salt, black pepper, and grated Parmesan cheese. Toss again to combine. Remove from heat.

  7. 7

    Garnish and Serve

Top with fresh basil leaves before serving. Serve warm.
