Calamari Preparation

Prepare Dry Mixture
In a large bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, garlic powder, and paprika. Mix well to combine.

Marinate Calamari
In a separate bowl, pour the buttermilk and add the calamari rings. Allow it to marinate for at least 30 minutes.

Dredge Calamari
After marinating, remove the calamari from the buttermilk and let the excess drip off. Dredge each ring in the dry mixture, ensuring they are well-coated.

Heat Oil
In a deep frying pan or a large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry Calamari
Fry the calamari in batches for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Sauté Garlic
In a saucepan, heat the olive oil over medium heat. Add minced garlic cloves and sauté until fragrant, about 1-2 minutes.

Simmer Sauce
Stir in the canned crushed tomatoes, dried oregano, dried basil, salt, black pepper, and red pepper flakes. Allow the sauce to simmer for 15-20 minutes.

Once the sauce has thickened, stir in the chopped fresh parsley and remove from heat.
