Prepare the Lettuce
Wash the Romaine lettuce thoroughly under cold running water. Remove any wilted or damaged leaves. Dry the lettuce using a salad spinner or by patting with paper towels. Chop or tear the lettuce into bite-sized pieces.

Grate the Parmesan Cheese
Using a box grater or a microplane, grate the Parmesan cheese until you have about 1 cup. Set aside.
Making the Dressing

Prepare the Dressing
In a small bowl, mash the anchovy fillets and garlic together until they form a paste. Add the lemon juice, Dijon mustard, and Worcestershire sauce, mixing well.

Emulsify the Dressing
Slowly drizzle in the olive oil while whisking continuously until the dressing is well combined and emulsified. Season with salt and black pepper to taste.
Assembling the Salad

Combine Ingredients
In a large salad bowl, add the prepared Romaine lettuce. Pour the dressing over the lettuce and toss gently to coat the leaves evenly.

Add Croutons and Cheese
Add the croutons and grated Parmesan cheese on top of the dressed lettuce. Toss lightly to combine.
