Chocolate Mousse Directions

Melt the Chocolate
Chop the dark chocolate into small pieces and place it in a heatproof bowl over a pot of simmering water (double boiler). Stir occasionally until melted and smooth. Remove from heat and let it cool slightly.

Prepare Egg Mixture
In a separate bowl, whisk the eggs and granulated sugar together until the mixture is thick and pale in color. This should take about 3-5 minutes.

Combine Ingredients
Once the chocolate has cooled slightly, add a pinch of salt and vanilla extract to it. Gradually fold in the egg mixture into the melted chocolate until fully combined and smooth.

Whip the Cream
In another bowl, whip the 300 ml of heavy cream until soft peaks form. Carefully fold this whipped cream into the chocolate mixture gently until no white streaks remain.

Chill the Mousse
Spoon the mousse into serving dishes or cups and refrigerate for at least 2 hours to set.

Prepare the Whipped Cream
In a clean bowl, pour in 200 ml of heavy cream, powdered sugar, and vanilla extract. Using a hand mixer or stand mixer, whip the cream until stiff peaks form, being careful not to overwhip.

Once the mousse has set, top each serving with a generous dollop of whipped cream before serving.
