Prepare the Chicken
In a large bowl, combine the buttermilk, paprika, garlic powder, onion powder, salt, and black pepper. Add the chicken thighs, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours or overnight.

Dredge the Chicken
In another bowl, place the flour. Remove the chicken from the buttermilk marinade, allowing excess to drip off, and dredge in the flour until fully coated.

Fry the Chicken
In a large skillet or deep fryer, heat the vegetable oil over medium-high heat. Once hot, carefully add the coated chicken thighs. Fry for about 5-7 minutes per side, or until golden brown and cooked through. Remove and let drain on paper towels.

Assemble the Sandwich
Spread Duke’s mayo on the top and bottom of each burger bun. Place a piece of fried chicken on the bottom bun, followed by a leaf of lettuce, a few pickle slices, and some red onion. Top with the other half of the bun.

Serve immediately while hot with your favorite side.
