Method

Tri-Tip Preparation

    Seasoning the Meat

    Rub the tri-tip roast with olive oil, then season it with garlic powder, onion powder, smoked paprika, salt, black pepper, and fresh rosemary. Let it marinate for at least 30 minutes.

    Cooking the Tri-Tip

    Preheat your grill or oven to 450°F (232°C). Cook the tri-tip for about 25-30 minutes for medium-rare, flipping halfway through. Use a meat thermometer to check for desired doneness.

    Resting

    Remove the tri-tip from heat and let it rest for 10 minutes before slicing against the grain.

    Preparing the Potatoes

    Preheat the oven to 425°F (220°C). Slice the potatoes thinly, making sure not to cut all the way through.

    Seasoning and Baking

    Drizzle olive oil over the potatoes, pressing garlic cloves into the cuts. Sprinkle with thyme, salt, and pepper. Bake for 45-50 minutes until crispy on the outside and tender inside.

Macaroni Salad Preparation

    Boil the elbow macaroni according to package instructions. Drain and rinse under cold water to cool.

    Mixing the Salad

    In a large bowl, mix the cooked macaroni, mayonnaise, Dijon mustard, diced celery, and diced red onion. Season with salt and pepper to taste. Garnish with paprika before serving.
