Deviled Eggs

Method

Preparation

  1. 1

    Boil the Eggs

Place the eggs in a pot and cover them with cold water. Bring to a boil over medium-high heat. Once boiling, cover the pot, remove from heat, and let sit for 12 minutes.

  2. 2

    Prepare the Bacon

While the eggs are cooking, preheat a skillet over medium heat. Add the bacon slices and cook until crispy. Remove and drain on paper towels. Once cooled, chop into small pieces.

  3. 3

    Make the Filling

After the eggs have cooled, peel them and slice in half lengthwise. Remove the yolks and place them in a mixing bowl. Mash the yolks with mayonnaise, Dijon mustard, white vinegar, salt, and black pepper until smooth.

  4. 4

    Fill the Eggs

Spoon or pipe the yolk mixture back into the egg whites.

  5. 5

    Add Candied Bacon

In the same skillet used for the bacon, add molasses and return the chopped bacon to the skillet. Stir to coat the bacon in molasses and cook for an additional 2 minutes.

  6. 6

    Top the Eggs

Sprinkle the molasses candied bacon over the filled eggs and garnish with chopped chives.
