Method

Prepare the Steak

    Marinate the Steak

    In a bowl, combine the olive oil, garlic powder, chili powder, cumin, salt, and black pepper. Whisk together until well combined. Add the flank steak to the bowl, ensuring it is evenly coated with the marinade. Cover and let marinate for at least 30 minutes, or up to 2 hours in the refrigerator.

    Grill the Steak

    Preheat your grill to medium-high heat. Remove the steak from the marinade and discard the marinade. Grill the steak for about 5-7 minutes per side for medium-rare, or until it reaches your desired level of doneness. Once cooked, remove from the grill and let it rest for 5 minutes.

    Slice the Steak

    After resting, slice the steak against the grain into thin strips.

Assemble the Tacos

    Prepare the Tortillas

    Warm the corn tortillas on the grill for about 30 seconds on each side until pliable.

    Chop the Vegetables

    Finely chop the onion and cilantro. Cut the lime into wedges.

    Build the Tacos

    Place a portion of the sliced steak onto each warm tortilla. Top with chopped onion and cilantro. Squeeze lime juice over the top to taste.
