Preparation of Ingredients

    Cook the Chorizo

    In a skillet over medium heat, add 1 cup of chorizo. Cook until browned and fully cooked, stirring occasionally, about 5-7 minutes. Remove from heat and set aside.

    Chop the Vegetables

    Finely chop 2 cloves of garlic and 1 whole jalapeño pepper (remove seeds if you prefer less heat). Set aside.

    Mix the Cheeses

    In a mixing bowl, combine 2 cups of Chihuahua cheese, 1 cup of mozzarella cheese, and 1 cup of Monterey Jack cheese. Mix well.

Cooking Queso Fundido

    Sauté Garlic and Jalapeño

    In the same skillet used for chorizo, add 1 tablespoon of olive oil over medium heat. Add chopped garlic and jalapeño. Sauté for about 2 minutes until fragrant.

    Combine Ingredients

    Add the cooked chorizo to the skillet with the garlic and jalapeño. Stir to combine and heat for another minute.

    Melt the Cheese

    Reduce heat to low and sprinkle the mixed cheeses over the chorizo mixture. Cover the skillet with a lid and let the cheese melt for about 5-7 minutes, stirring occasionally, until the cheese is bubbly and melted.

    Prepare Tortillas

    While the cheese is melting, warm the tortillas in a separate skillet or microwave until soft and pliable.

    Once the queso fundido is melted and bubbly, remove from heat and sprinkle with fresh chopped cilantro. Serve immediately with warm tortillas for dipping.
