Prepare the Churro Dough

Combine wet ingredients
In a medium saucepan, combine the water, unsalted butter, granulated sugar, and salt. Bring the mixture to a boil over medium heat.

Mix in flour
Once boiling, remove from heat and add the all-purpose flour. Stir vigorously with a wooden spoon until the dough forms a ball and pulls away from the sides of the pan.

Add eggs
Let the dough cool for about 5 minutes. Then, add the eggs one at a time, stirring well after each addition until fully incorporated and the dough is smooth.
Prepare the Cinnamon Sugar Coating

Mix cinnamon and sugar
In a shallow dish, combine the granulated sugar and ground cinnamon. Stir until well mixed and set aside.
Fry the Churros

Pipe the dough
Transfer the churro dough into a piping bag fitted with a large star tip. Carefully pipe 4-6 inch long strips of dough directly into the hot oil.

Fry until golden
Fry the churros for about 2-3 minutes on each side, or until they are golden brown. Use a slotted spoon to remove them from the oil and drain on paper towels.
