Prepare the Tortillas
Cut the corn tortillas into triangles to create chip shapes.

Heat the Oil
In a large frying pan, heat the vegetable oil over medium-high heat until it shimmers.

Fry the Chips
Carefully add a handful of tortilla triangles to the hot oil. Fry them for about 2-3 minutes or until they turn golden brown and crispy. Remove them with a slotted spoon.

Drain and Season
Place the fried chips on paper towels to drain excess oil. Sprinkle with salt while they are still hot.

Combine Ingredients
In a medium mixing bowl, combine the diced tomatoes, onion, jalapeño pepper, and cilantro.

Pour lime juice over the mixture and sprinkle with salt. Stir until well mixed.

Taste the salsa and adjust the seasoning with more salt or lime juice if needed.
