Assembly
- 2
Prepare Tortillas
Preheat your oven to 375°F (190°C). In a skillet over medium heat, warm the corn tortillas for about 30 seconds on each side to make them pliable.
- 3
Fill the Tortillas
Spoon a portion of the chicken filling (about 1/4 cup) onto the center of each tortilla, then roll them up tightly and place seam side down in a greased baking dish.
- 4
Add Sauce and Cheese
Once all tortillas are filled and placed in the baking dish, pour the extra enchilada sauce over the top and sprinkle with the shredded cheese.
- 5
Bake
Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
- 6
Serve
Remove from the oven, let cool for a few minutes, then serve warm with additional cilantro or sour cream if desired.
