Prepare the Tamale Dough

    Add the vegetable shortening to the dry ingredients. Using your hands or a pastry cutter, mix until the mixture resembles coarse crumbs.

    Gradually pour in the broth while mixing with your hands until a soft, pliable dough forms. The dough should be moist but not sticky.

Prepare the Filling

    Sauté Vegetables

    In a skillet, heat a bit of oil over medium heat. Add the chopped onion and minced garlic. Sauté until the onion becomes translucent.

    In a mixing bowl, combine the sautéed onion and garlic with shredded pork, green chilies, cheddar cheese, cumin, and black pepper. Mix well to evenly distribute all ingredients.

Assemble the Tamales
