Prepare the Filling

Cook the Rice

If you haven't already cooked the rice, do so according to package instructions. Set aside once cooked.

Mix the Filling Ingredients

In a large mixing bowl, combine the cooked rice, black beans, diced bell pepper, diced red onion, corn, chopped cilantro, lime juice, ground cumin, salt, and pepper. Mix well until all ingredients are evenly distributed.

Assemble the Burrito

Prepare the Tortilla

Lay a large flour tortilla on a clean, flat surface.

Add Filling

Spoon a generous amount of the filling mixture onto the center of the tortilla. If using, sprinkle shredded cheese on top.

Wrap the Burrito

Fold the sides of the tortilla inward over the filling, then roll the burrito tightly from the bottom up. Ensure the filling is enclosed securely.

Repeat for Second Burrito

Repeat the process with the second tortilla and remaining filling.

Serve

Serve the burritos warm with sour cream and salsa on the side, or drizzle them on top as desired.
