Marinate the Pork

    Prepare the Marinade

    In a large bowl, combine pineapple juice, orange juice, minced garlic, minced chipotle peppers, oregano, cumin, salt, black pepper, and white vinegar. Mix well.

    Marinate the Pork

    Cut the pork shoulder into large chunks and add it to the marinade. Cover and refrigerate for at least 4 hours, preferably overnight for best flavor.

Cook the Pork

    Grill or Sear the Pork

    Preheat a grill or skillet over medium-high heat. Remove the pork from the marinade and discard the marinade. Grill or sear the pork for about 8-10 minutes on each side, or until internal temperature reaches 145°F. Allow to rest for 10 minutes before slicing.

    Slice the Pork

    Thinly slice the pork shoulder against the grain into bite-sized pieces.

Assemble the Tacos

    Warm the Tortillas

    Warm the corn tortillas on a skillet or grill for about 30 seconds on each side, until pliable.

    Fill the Tacos

    Place a generous amount of sliced pork on each tortilla. Top with diced onion and chopped cilantro.

    Serve the tacos with lime wedges on the side for squeezing over the top.
