    In a mixing bowl, combine the shredded chicken, diced bell pepper, diced onion, salt, and black pepper. Mix well to combine all ingredients.

    Place one flour tortilla on a flat surface. Evenly distribute 1/2 cup of the cheese mixture on one half of the tortilla. Add a portion of the chicken and veggie mixture on top of the cheese. Fold the tortilla in half to cover the filling.

    Heat 1 tablespoon of olive oil in a skillet over medium heat. Once hot, add the folded quesadilla to the skillet. Cook for about 2-3 minutes on each side, or until golden brown and the cheese is melted. Repeat with remaining tortillas.
