Method
For the Quesadillas
- 1
Prepare the Filling
In a mixing bowl, combine the shredded chicken, diced bell pepper, diced onion, salt, and black pepper. Mix well to combine all ingredients.
- 2
Assemble the Quesadillas
Place one flour tortilla on a flat surface. Evenly distribute 1/2 cup of the cheese mixture on one half of the tortilla. Add a portion of the chicken and veggie mixture on top of the cheese. Fold the tortilla in half to cover the filling.
- 3
Cook the Quesadillas
Heat 1 tablespoon of olive oil in a skillet over medium heat. Once hot, add the folded quesadilla to the skillet. Cook for about 2-3 minutes on each side, or until golden brown and the cheese is melted. Repeat with remaining tortillas.
- 4
Slice and Serve
Remove the quesadillas from the skillet and let them cool for a minute. Slice into wedges and serve warm.
For the French Fries
- 5
- 6
Heat the Oil
In a deep pot or fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the oil is at the correct temperature.
- 7
Fry the Potatoes
Carefully add the dried potato fries to the hot oil in batches, ensuring not to overcrowd the pot. Fry for about 5-7 minutes or until they are golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
- 8
Season the Fries
While the fries are still hot, sprinkle with salt and paprika (if using) to taste. Toss to coat evenly.
