Method

Preparation of the Ham

  1. 1

    Preheat the Oven

Preheat your oven to 325°F (163°C).

  2. 2

    Prepare the Ham

Place the bone-in ham on a roasting rack in a large roasting pan. If the ham has a thick rind, score the surface in a diamond pattern to help the glaze penetrate.

  3. 3

    Mix the Glaze

In a medium bowl, combine the brown sugar, honey, Dijon mustard, ground cloves, and black pepper. If using, add the apple cider vinegar and pineapple juice to the mixture and stir until well combined.

  4. 4

    Apply the Glaze

Generously brush the glaze over the ham, ensuring it gets into the scored sections for maximum flavor.

  5. 5

    Roast the Ham

Cover the ham loosely with foil and place it in the preheated oven. Roast for about 15-18 minutes per pound, or until the internal temperature reaches 140°F (60°C). Remove the foil for the last 30 minutes of cooking to caramelize the glaze.

Serving the Ham

  1. 6

    Rest the Ham

Once the ham is done, remove it from the oven and let it rest for at least 15 minutes before carving. This allows the juices to redistribute.

  2. 7

    Carve and Serve

Carve the ham into thin slices and serve with any remaining glaze on the side. Enjoy!
