Preparing the Birria

    Toast the Chiles

    In a dry skillet over medium heat, toast the guajillo and ancho chiles for 2-3 minutes until fragrant. Remove from heat and let cool.

    Blend the Sauce

    Once cooled, remove the stems and seeds from the chiles. Place them in a blender with the chopped onion, minced garlic, cumin, oregano, salt, and black pepper. Add 1 cup of beef broth and blend until smooth.

    Prepare the Beef

    Cut the beef chuck roast into large chunks and season with salt and pepper.

    Cook the Birria

    In a large pot or Dutch oven, heat a little oil over medium-high heat. Brown the beef chunks on all sides. Pour the blended sauce over the beef and add the remaining beef broth and bay leaves. Bring to a boil, then reduce to a simmer and cover. Cook for 2-3 hours until the beef is tender.

    Cook the Ramen Noodles

    In a separate pot, bring 6 cups of water to a boil. Add the ramen noodles and cook according to package instructions, usually about 3-4 minutes. Drain and set aside.

    Once the noodles are cooked, return them to the pot and add the soy sauce. Stir to combine.

Assembling the Dish

    Combine the Birria and Ramen

    In serving bowls, place a portion of the seasoned ramen noodles. Ladle the birria and its broth over the noodles.

    Garnish and Serve

    Top the ramen birria with chopped green onions, fresh cilantro, and a squeeze of lime. Serve with thinly sliced radishes on the side.
