Prep Cheese

Grate the Cheese
Grate the Chihuahua and Monterey Jack cheeses using a box grater or food processor. Set aside.

Prepare Cream Cheese
In a microwave-safe bowl, soften the cream cheese for about 30 seconds in the microwave until it’s creamy and easy to mix.

Chop Jalapeños
Finely chop the jalapeños. If you prefer less heat, you can remove the seeds.
Cook Queso Fundido

Combine Ingredients
In a large mixing bowl, combine grated Chihuahua cheese, Monterey Jack cheese, softened cream cheese, and chopped jalapeños. Mix well.

Melt Cheese
Transfer the cheese mixture to an oven-safe skillet or baking dish. Preheat your oven to 350°F (175°C) and place the skillet in the oven.

Bake
Bake for 15-20 minutes until the cheese is bubbly and golden brown on top.
Prepare Tortillas

Warm Tortillas
While the cheese is baking, warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side until pliable.

Once the queso fundido is out of the oven, sprinkle with fresh cilantro and a dollop of sour cream. Serve immediately with warm tortillas.
