For the Quesabirria

Method

Preparing the Birria

    Soak the Chiles

    Remove the stems and seeds from the guajillo and ancho chiles. Place them in a pot of boiling water and let soak for about 15 minutes until softened.

    Make the Marinade

    In a blender, combine the soaked chiles, onion, garlic, cumin, salt, and black pepper. Blend until smooth. Add a little of the soaking water if necessary to achieve a smooth consistency.

    Marinate the Beef

    In a large bowl, coat the beef chuck roast with the marinade. Allow it to marinate in the refrigerator for at least 2 hours or overnight for best flavor.

    Cook the Beef

    In a large pot, add the marinated beef, bay leaves, and beef broth. Bring to a boil, then reduce heat and let it simmer for about 3 hours, or until the beef is tender and easily shredded.

    Shred the Beef

    Once cooked, remove the beef from the pot and shred it using two forks. Set aside, and reserve the broth for serving.

Assembling the Quesabirria

    Prepare Tortillas

    Heat a skillet over medium heat. Dip each corn tortilla briefly in the reserved broth, then place it on the skillet.

    Add Cheese and Meat

    On one half of the tortilla, sprinkle a generous amount of shredded cheese followed by the shredded beef. Allow it to cook until the cheese melts.

    Fold and Cook

    Fold the tortilla over to create a half-moon shape. Cook for another 2-3 minutes on each side until golden brown and crispy.

    Garnish and Serve

    Serve the quesabirria hot, garnished with fresh cilantro, diced onions, and lime wedges. Offer sour cream on the side for dipping.
