    Prepare the Chorizo

    In a skillet over medium heat, add the chorizo. Cook for about 5-7 minutes, breaking it apart with a spatula until it’s fully cooked and browned. Drain excess fat if necessary.

    Prepare the Bolillos

    While the chorizo is cooking, slice the bolillo rolls in half lengthwise. Place them on a baking sheet, cut side up.

    Spread the Beans

    Spread ½ cup of refried beans evenly over the cut side of each bolillo half.

    Add the Chorizo

    Once the chorizo is cooked, distribute it evenly over the refried beans on each bolillo half.

    Top with Cheese

    Sprinkle ¼ cup of Mexican cheese over the chorizo on each bolillo half.

Cooking

    Broil the Molletes

    Preheat the oven broiler. Place the baking sheet with the prepared bolillo halves under the broiler for about 3-5 minutes, or until the cheese is melted and bubbly. Keep a close eye to prevent burning.

Serving

    Remove the molletes from the oven and let them cool for a minute. Top with sour cream, salsa, and fresh cilantro as desired.
