Beef Preparation

Chimichanga Assembly

Method

Beef Preparation

  1. 1

    Sear the Beef

In a large skillet over medium-high heat, sear the chuck roast on all sides until browned (about 4-5 minutes per side).

  2. 2

    Add Ingredients

Transfer the seared roast to a slow cooker. Add beef broth, chopped onion, minced garlic, cumin, chili powder, salt, and black pepper.

  3. 3

    Cook the Beef

Cover and cook on low for 8 hours or on high for 4 hours, until the beef is tender and easily shreds with a fork.

  4. 4

    Shred the Beef

Remove the beef from the slow cooker and shred it using two forks. Return the shredded beef to the slow cooker to soak up the juices.

Chimichanga Assembly

  1. 5

    Prepare the Tortillas

Lay out a large tortilla on a clean surface. Place a generous amount of shredded beef (about 1/2 cup) in the center.

  2. 6

    Add Cheese

Sprinkle 1/4 cup of shredded cheese on top of the beef.

  3. 7

    Fold the Tortilla

Fold in the sides of the tortilla, then roll it up tightly from the bottom to the top to create a chimichanga.

  4. 8

    Heat the Oil

In a large skillet, heat 2 cups of vegetable oil over medium heat until hot.

  5. 9

    Fry the Chimichangas

Carefully place 2-3 chimichangas in the hot oil, seam side down. Fry for about 3-4 minutes on each side until golden brown.

  6. 10

    Drain and Serve

Remove the chimichangas and drain on paper towels. Serve hot with sour cream, guacamole, and salsa.
