Cooking the Potatoes

    Prepare the Potatoes

    Peel and dice the potatoes into small cubes. In a medium pot, add the diced potatoes and cover with water. Bring to a boil and cook until the potatoes are fork-tender, about 10-12 minutes.

    Sauté the Potatoes

    Drain the potatoes and heat olive oil in a skillet over medium heat. Add the boiled potatoes, season with salt and pepper, and sauté until golden brown, about 5-7 minutes.

Cooking the Eggs

    Fry the Eggs

    In the same skillet after removing the potatoes, crack the eggs into the skillet. Cook to your desired doneness (sunny-side up or over-easy) for about 3-4 minutes.

Preparing the Dish

    Warm the Tortillas

    In a separate skillet, heat the corn tortillas for about 30 seconds on each side until warm and slightly toasted.

    Assemble the Dish

    On each plate, place a warm tortilla, top with a generous spoonful of refried beans, and place the cooked eggs on top. Pour the ranchero sauce over the eggs and garnish with fresh cilantro and slices of avocado.
