Method

Preparation of Tilapia

  1. 1

    Marinate the Tilapia

In a mixing bowl, combine olive oil, lemon juice, garlic powder, paprika, salt, and black pepper. Mix well. Add the tilapia fillets to the marinade, ensuring they are well coated. Cover and let marinate in the refrigerator for at least 30 minutes.

  2. 2

    Preheat the Grill

Preheat your grill to medium-high heat. If using a grill pan, heat it on the stove over medium-high heat.

  3. 3

    Grill the Tilapia

Remove the tilapia from the marinade and place on the grill. Grill for 4-5 minutes on each side or until the fish flakes easily with a fork. Once done, remove from the grill and set aside.

Assembling the PLT

  1. 4

    Prepare the Vegetables

Slice the ripe tomatoes and red onion thinly. Wash and dry the romaine lettuce leaves.

  2. 5

    Toast the Bread

Lightly toast the whole wheat sandwich bread slices on the grill or in a toaster until golden brown.

  3. 6

    Spread the Condiments

Spread mayonnaise on one side of each slice of toasted bread and Dijon mustard on the other side.

  4. 7

    Layer the Ingredients

On half of the bread slices, layer the grilled tilapia, followed by slices of tomato, red onion, and romaine lettuce. Top with the remaining bread slices to create the sandwich.

Serving

  1. 8

    Cut and Serve

Cut each sandwich in half diagonally and serve immediately with your choice of side.
