Preparing the Enchiladas

    Prepare the Tortillas

    Heat the olive oil in a large skillet over medium heat. Lightly fry each corn tortilla for about 10-15 seconds on each side until they are pliable. Remove and place them on a paper towel to drain excess oil.

    Fill the Tortillas

    In a bowl, combine the shredded cooked chicken, chopped onion, salt, and black pepper. Take one tortilla at a time, spoon some of the chicken mixture onto the center, and roll tightly. Repeat with all tortillas.

    Arrange in Baking Dish

    Spread half of the red enchilada sauce on the bottom of a baking dish. Place the filled tortillas seam side down in the dish, and pour the remaining enchilada sauce over the top. Sprinkle shredded cheese evenly over the sauce.

    Bake the Enchiladas

    Preheat the oven to 350°F (175°C). Bake the enchiladas for 20-25 minutes or until the cheese is bubbly and slightly golden.

Garnishing and Serving

    Prepare the Garnish

    While the enchiladas are baking, chop the cilantro and slice the jalapeños. Set them aside.

    Once the enchiladas are ready, remove them from the oven and let them cool for a few minutes. Serve hot with a dollop of sour cream, and sprinkle with chopped cilantro and sliced jalapeños on top.
