Filling

Method

Filling Preparation

  1. 1

    Prepare the Filling

In a large bowl, combine the shredded cooked chicken, chopped onion, minced garlic, cilantro, salt, and black pepper. Mix well until all ingredients are evenly incorporated.

Sauce Preparation

  1. 2

    Make the Tomatillo Sauce

In a saucepan over medium heat, combine the tomatillos, chopped jalapeño, minced garlic, and chopped onion. Cook for about 5-7 minutes, until the vegetables begin to soften.

  2. 3

    Blend the Sauce

Add the chicken broth, lime juice, and salt to the saucepan. Bring to a simmer and then blend the mixture using an immersion blender until smooth. Adjust seasoning if necessary.

Assembly and Baking

  1. 4

    Assemble the Enchiladas

Preheat the oven to 350°F (175°C). Lightly grease a baking dish. Take a corn tortilla, spoon about ¼ cup of the chicken filling into the center, roll it up, and place seam side down in the dish. Repeat with remaining tortillas and filling.

  2. 5

    Top with Sauce and Cheese

Once all the enchiladas are in the baking dish, pour the tomatillo sauce evenly over the top. Sprinkle the shredded cheese generously over the sauce.

  3. 6

    Bake

Cover the baking dish with foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, until the cheese is bubbly and golden.

Serving

  1. 7

    Serve the Enchiladas

Let the enchiladas cool for a few minutes before serving. Serve hot topped with sour cream and additional cilantro if desired.
