Method

Filling Preparation

  1. 1

    Prepare the Filling

In a mixing bowl, combine the shredded cooked chicken, chopped onion, shredded cheese, and chopped cilantro. Mix well until all ingredients are evenly distributed.

Sauce Preparation

  1. 2

    Prepare the Sauce

In a saucepan over medium heat, combine the enchilada sauce, ground cumin, chili powder, and salt. Stir well and let simmer for about 5 minutes to allow the flavors to meld.

Assembling Enchiladas

  1. 3

    Assemble the Enchiladas

Preheat your oven to 375°F (190°C). Take one corn tortilla and place a generous amount of the chicken filling in the center. Roll the tortilla tightly around the filling and place seam-side down in a greased baking dish. Repeat this process with the remaining tortillas and filling.

  2. 4

    Top with Sauce

Once all enchiladas are assembled in the dish, pour the prepared enchilada sauce evenly over the top, ensuring all enchiladas are well coated.

  3. 5

    Add Extra Cheese

Sprinkle any remaining shredded cheese over the top of the enchiladas for extra flavor and a gooey texture.

Baking

  1. 6

    Bake the Enchiladas

Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and slightly golden.

Serving

  1. 7

    Serve and Enjoy

Remove from the oven and let cool for a few minutes. Garnish with additional chopped cilantro if desired, then serve warm.
