Omelette Preparation

    Cook the Chorizo

    In a medium skillet over medium heat, add the chorizo. Cook for about 5-7 minutes, breaking it up with a spoon until browned and cooked through.

    Prepare the Vegetables

    While the chorizo is cooking, dice the tomato, onion, and green chile. Set aside.

    Whisk the Eggs

    In a bowl, crack the eggs and whisk them together. Add salt and pepper to taste, then stir in the diced tomato, onion, and green chile.

    Combine and Cook

    Once the chorizo is cooked, reduce the heat to low and pour the egg mixture over the chorizo. Allow it to cook undisturbed for about 2-3 minutes, or until the edges start to set.

    Finish the Omelette

    Using a spatula, gently lift the edges of the omelette and tilt the pan to allow uncooked eggs to flow to the edges. Cook for an additional 2-3 minutes or until the eggs are fully set. Fold the omelette in half and slide onto a plate.

    Cook the Potatoes

    Peel and dice the potatoes into small cubes. Boil in salted water for about 10-15 minutes or until fork-tender. Drain and set aside.

    In a small saucepan, heat the refried beans over low heat, stirring occasionally until warmed through.

    Warm the Tortillas

    In a dry skillet, warm the tortillas over medium heat for about 30 seconds on each side until pliable. Alternatively, wrap in foil and warm in a 350°F (175°C) oven for about 10 minutes.
