Prepare the Beef
In a slow cooker, place the chuck roast. Pour in the beef broth and add the diced onion, minced garlic, ground cumin, chili powder, salt, and black pepper. Stir to combine.

Slow Cook
Cover and cook on low for 8 hours or until the beef is tender and shreds easily with a fork.

Shred the Beef
Once cooked, remove the beef from the slow cooker and shred it using two forks. Return the shredded beef to the slow cooker, mixing it with the juices.
Chimichanga Assembly and Frying

Prepare the Tortillas
Lay out the flour tortillas on a clean surface. Place a generous amount of shredded beef filling in the center of each tortilla, followed by a sprinkle of shredded cheese.

Fold the Tortillas
Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to the top to form a chimichanga.

Heat the Oil
In a large frying pan or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Chimichangas
Carefully place the chimichangas seam-side down in the hot oil, frying in batches if necessary. Fry for about 3-4 minutes on each side or until golden brown and crispy.
